This conclusion was made by scientists at the Institute of Cryobiology and Food Technologies, based on the results of research that lasted 9 years. Bulgarian scientists, in cooperation with colleagues from Germany, have found that sheep's milk and cheese produced in the Rhodope Mountains have a very high content of anti-conceivant substances (substances), which serves as protection for the human body against a number of cancers.
Researchers studied three breeds of sheep that are bred in the Rhodopes – Karakachan, Rhodope Tsigai and Middle Rhodope. The aim was to trace the biological value of sheep's milk and its fatty acid content. According to the conclusion, which was eventually voiced by Professor Lyubomir Angelov, Bulgarian breeds of sheep, namely Karakachan and Rhodope Tsigai, showed a very high content of anti-cement substances in their milk.
According to another scientist, Dr. Stoycho Danchev, who is engaged in breeding the oldest Bulgarian sheep breed in Momchilovtsi – the Karakachan, it is distinguished by high adaptability, resistance to diseases and the need for mandatory daily movement over long distances – up to 20 km. "Our grandfathers, here in Momchilovtsi, at one time had a population of 40 thousand sheep. And those who were engaged in their breeding almost all lived for 90-100 years," he says.
The composition and quality of the natural and diverse pastures of the Rhodopes, on which sheep graze, lead to a high content of anti-cementing substances in milk, the researchers are convinced. But in order for these substances to be preserved in dairy products in a really high concentration, for the preparation of "kiselo mlyako" and cheese, it is necessary to use milk produced directly in the mountains and in the highlands, scientists add. "Scientifically It has been proven that they (anti-cementing substances – ed.) inhibit and serve as a preventive measure against skin, colon and stomach cancer", – Prof. Lyubomyr Angelov summed up his scientific research.
